Beet hummus with vegetables and pita

RMHC Toronto offers a wide range of food programs, all meant to encourage nutritious eating. Here is a healthy hummus recipe for you to try with your family, brightly coloured with beets.


Bright and Beautiful Beet Hummus

Ingredients:
1 raw beet, roughly chopped
2 cloves garlic, peeled
1 cup cooked black beans, drained and rinsed if using canned
¼ cup tahini
2 Tbsp lemon juice
1 Tbsp balsamic vinegar
1 tsp ground cumin
½ tsp salt

Directions:
1. Pulse beet and garlic in a food processor until finely minced. Add remaining hummus ingredients and puree until smooth.
2. Transfer to a serving bowl.
